The only fresh fish they had today was salmon, so it will be shrimp & crabcakes with rice pilaf and peas as sides.

Guess I'll have to go into town this week to the real supermarket for the fresh fish.

You can do the parchment thing with shrimp too. Just cook everything else for about 10 minutes and then open it up and put the shrimp in. Otherwise it will be overdone.

I usually have parchment. I always have wax paper though. Which is odd because I use parchment more than wax.

My mother always had wax paper. she wrapped out sandwiches in it for our lunches. Everyone else had baggies and we had wax paper. Which really dries out the bread. I just don't understand the logic there.

And it reminds me of Vacation when they ate the dog pee sandwiches.

it's probably what she grew up doing as far as the wax paper thing. I think I've had the same roll of wax paper for at least 5 years - I just don't use it.
