Chilli Bean Dip
Filling, tasty and cheap to make

Chilli Bean Dip

1 large onion
2 cloves garlic
1 Tbsp oil
1 capsicum
2 tsp ground cumin
1 tsp oreganum
¼ - ½ tsp ground chilli
1 can baked beans
1 Tbsp tomato paste (tomato concentrate in some countries??)

Chop and cook onion in oil. Add capsicum, herbs and spices and cook 1-2 minutes. Strain excess sauce from baked beans and reserve liquid. Add beans and tomato paste and heat through. Mash slightly and add reserved sauce to desired consistency.
If you have made it too spicy, or want to make chilli stretch further, can add a tin of creamed corn.

Serve as over corn chips or potato wedges (homemade)with grated cheese on top, in tacos or burritos, or with cheese in a toasted sandwich.
